Double Chocolate Heath Bar Cookies

I’m at a loss of words for these cookies. Go make them.

Double Chocolate Heath Bar Cookies

-2 sticks unsalted butter, softened

-3/4 cup granulated sugar

-3/4 cup dark brown sugar

-2 eggs

-2 tsp vanilla

-2 cups flour

-2/3 cup good quality cocoa powder (I use Ghirardelli…Hershey’s isn’t even worth using)

-3/4 tsp baking soda

-1/4 tsp salt

-1 cup chocolate chips (I used Ghirardelli Bittersweet..they’re huge!)

-3/4 cup chopped Heath Bars

Preheat oven to 350.

Cream the butter and both sugars.

Blend in the eggs and vanilla.

Combine flour, cocoa powder, baking soda, and salt in a bowl.

Stir flour mixture into butter mixture (Don’t Overmix!!)

Stir in chocolate chips and heath bars.

Drop teaspoons of batter two inches apart on baking sheets.

Bake 10-12 minutes, allow to cool on cookie sheets before moving them to cooling racks.

Store in an airtight container up to 3 days.

This recipe can also be made with peanut butter chips, just regular chocolate chips or any kind of nut you can think of. Feel free to change it up! Just keep the mix ins to under 2 cups.

I have a few random pictures to share today…

Has anyone ever had these? I found them at the local gourmet Italian grocer. The animals are so much cuter than American animal crackers, and on the bag it says that they are “the happiness of the morning”. How could I not have gotten these with a slogan like that?! They’re delicious too, really buttery. Keep your eye out for them!

I just thought this was really cute. We had some friends over a few nights ago and their (almost) five year old son wanted to leave his shoes by the door so he wouldn’t forget them. He definitely didn’t forget them!

Happy Saturday!

  2. I pinned these last week and have made them twice already! They are my husband’s new favorite cookie and the ones he took to work disappeared in minutes. Love, love, love them!
